Bikini Recipe

Serves 10 people

To make the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Instructions

For the Citrus Syrup: Combine all the components into a saucepan, heat until it reaches a light boil, mixing to dissolve. After that, remove from the burner and let it to cool entirely. Pour into a clean bottle, close it and refrigerate it chilled, where it will keep for about four weeks.

For the Premix: Pour all the liquid ingredients in a sizeable container, allow it to infuse for an hour, then filter it best through a fine cloth, to ensure it's completely strained.

For serving: Measure 85ml from the batch mix into a cocktail shaker filled with ice, and stir gently for about 60 seconds until cold. Strain to a frosted cocktail glass or similar, top with a few cranberries and complete it using a brief mist with the mandarin essence over the top.
